Oh, hello there! Today, I want to share with you one of my absolute favorite pasta recipes. This Tomato Basil Pasta is so easy to make and it only takes 15 minutes! It's perfect for those busy weeknights when you don't have a lot of time to spend in the kitchen.
Tomato Basil Pasta
Ingredients:
- 8 ounces spaghetti
- 4 tablespoons butter
- 2 garlic cloves, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese, plus more for serving
Instructions:
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute.
- Add the cherry tomatoes and cook for 5-7 minutes, or until they start to soften and release their juices.
- Add the cooked spaghetti, basil, salt, and black pepper to the skillet. Toss everything together until the spaghetti is coated in the sauce.
- Sprinkle the parmesan cheese over the top and give everything one final toss.
- Serve hot with additional parmesan cheese on top.
Skillet Chicken Enchilada Pasta
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 (10-ounce) can red enchilada sauce
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (4-ounce) can diced green chilies
- 2 cups uncooked rotini pasta
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- Add the onion to the skillet and cook until softened, about 3-5 minutes.
- Add the garlic and cook for an additional minute.
- Stir in the enchilada sauce, diced tomatoes with their juice, green chilies, uncooked pasta, chicken broth, chili powder, cumin, salt, and black pepper.
- Bring the mixture to a boil and then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the pasta is cooked through.
- Add the cooked chicken to the skillet and stir everything together.
- Sprinkle the shredded cheddar cheese over the top and cover the skillet with a lid. Cook until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve hot.
