Fresh Tomato Pesto Pasta Salad
This pasta salad is so easy to make and requires only a handful of ingredients.
- 1 pound pasta of your choice (I used fusilli)
- 2 cups cherry tomatoes, halved
- 1/2 cup basil pesto
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions
- In a small bowl, whisk together pesto, olive oil, salt, and pepper
- In a large bowl, mix pasta, grape tomatoes, and pesto mixture
- Chill for at least 30 minutes before serving
Salted Egg and Tomato Pasta
This dish is a bit more unique but trust me, it's worth a try!
- 1 pound spaghetti
- 2 salted eggs, peeled and mashed
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 3 medium tomatoes, chopped
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions
- In a large pan, heat olive oil over medium heat
- Add garlic and onion, sauté until onion is translucent
- Add tomatoes and cook until they have softened
- Add salt and pepper to taste
- Stir in mashed salted egg
- Add cooked pasta to the pan and mix until well combined
- Serve hot and enjoy!
